We’re delighted to announce Grace as the new Level 3 Lead Baker Apprentice, marking the third successful year of partnership between Plumpton College and the Jim Jackson Education & Enabling Foundation. Together, the two organisations continue to champion opportunities for young people facing personal obstacles, offering the UK’s first 50% funded Lead Baker Apprenticeship at One Garden Brighton — a programme especially meaningful to the Foundation, inspired by founder Jim Jackson’s own early bakery career.

During her two-year apprenticeship, Grace will train in Plumpton College’s state-of-the-art AgriFood Centre while developing her practical skills alongside former apprentice and now Head Baker Sophie at One Garden Brighton’s back-of-house bakery. From patisserie to fresh focaccia served daily in the café, Grace will gain hands-on experience across all areas of a commercial bakery. As she begins her journey, she shares: “This is a life-changing opportunity for me — it’s my dream job and I’m very excited to learn as much as I can.”

Plumpton College is the UK’s first provider of the Level 3 Lead Baker Apprenticeship, a major step forward for professional bakery training. With a focus on leadership, innovation and real industry skills, the programme equips apprentices for rewarding careers across the food and hospitality sector.
